2007 HAWKES BAY

This wine was originally designed for Trinity Hill’s partners’ restaurant in London, to accompany Mediterranean-style dishes. It is the ultimate “al fresco” wine and particularly good as an aperitif.

THE VARIETY
Cabernet Franc 58%, Merlot 19%, Syrah 15% and Tempranillo 8%

VINEYARD LOCATION
Gimblett Gravels in Hawkes Bay.

VINTAGE CONDITIONS
2007 was an exceptional season in Hawkes Bay. The moderate summer and long warm, dry autumn allowed us to harvest the grapes when the flavour profiles were at their optimum level for a great Rose style and still retaining good acidity.

WINEMAKING
The grapes were rapidly and gently pressed, after a short skin contact period to give the beautiful pink colour and to produce an elegant, fruit driven wine with low phenolics. The juice was cold settled to clarify it and then cool fermented in stainless steel tanks to retain the fruit character. The wine was bottled in early June 2007.

Red currants, cranberry and strawberry.

THE PALATE
A gentle crisp acidity is balanced by a small amount of retained sweetness and sweet berry fruit.
A fresh, light and smooth texture.
